Graphics Editing PSD layers

I have downloaded Salt and soap template but i cannot figure out how to edit the items that are not in the images file. I want to change thebackground colors and some of the logo images. Everything that i need to edit is in the psd file but not in the zip file. Where are all of these extra "layers" being referenced from. Its driving me crazy, are these areas not able to be edited because of the free teplate setup??

 

From what I'm finding, some things are locked which means that they cannot be changed. I'm currently editing the Baby Template and have learned a lot about Photoshop in just a couple of hours.
