Web Design Photoshop converting to html/css

Hi, have previously done a site in photoshop and converted to html/css.
It all works fine, if a little slow (www.vansignz.co.uk) but all the text has been rasterised, so therefore, it cannot be searched via crawlers etc.
I am trying to get to grips with making a separate css style sheet, by looking at your templates, but have noted on your 'diary' template, that in photoshop, the text is not rasterised, and in the images file, there is no rasterised text either. Can you tell me if you just put the text in the photoshop file to show it as an example, but when you converted to html, you removed it and replaced it by written html afterwards? Hope this makes sense; It would help me a lot to know how you did it, so that I can hopefully do the same with mine.
    Many Thanks, Ben.
